The Beginning

1989

Dora Juarez was a mother to five, a grandmother to 13, a wife to one, and a friend to everyone. In 1989 she opened the best Mexican Restaurant on the planet in Harlingen Texas. She was the cook, the hostess, the server…and the entertainer. After the entire restaurant was sat and had food on their tables, she would begin playing old hymns on an organ set at the entrance of the restaurant. From the made-from-scratch tortillas to the warm greetings, Dora created a special space unlike anything that has ever, or will ever be seen again.

As one of her grandson’s, I hope to take the spirit of hospitality from Dora’s Cafe, and marry it with everything the world loves about latin food.

Chef Aaron Ware has been passionate about food since he was 15. He began his culinary journey in 2000 when he started as a xyz at Charlstons. After opening his first concept he found a passion for teaching others. He has been a part of the XYZ concepts in various capacities and (being Married to a mexican) has a special insight on latin american food….etc..MINI bio

After spending the last 15 years inspiring and teaching, Chef Ware is excited to embark on the journey of creating a unique latin food experience for Tulsa.


Over the last 5 months he has explored everythting that goes into every great dish latin dish. From the mojo slaw from cuba, to the plantain chips from Colombia, Coyote Guapo will be a place full of incredibly wild flavors!
